“Make you banana pancakes, pretend like it’s the weekend, now…”.

Bananas are a hugely versatile ingredient that goes a long way in a lot of recipes, including pancakes. This tasty banana pancake brings out the sweetness from the fruit and offers a thick and creamy texture for your pancake batter.

All you need is three ingredients: bananas, eggs, and whole-wheat flour.

To make, begin by mashing the banana with a fork, adding the eggs, and whisking until the eggs are evenly incorporated into the mix.

Now it’s time to add the flour (and any extras you want, like chocolate chips, raisins, or blueberries). Stir until combined.

Set the mixture aside, allowing it to thicken as you heat a skillet over a low-medium heat. Put a small touch of oil or butter in the skillet and begin by scooping some of the batter into the skillet and cook the pancakes as you normally would.

    3. A Classic French Crepe – perfect with lemon and sugar

Ah, a classic French Crepe. A tasty treat that pairs perfectly with lemon and sugar, some fruit and chocolate spread, or even with some tasty savoury fillings like bacon or cheese.

To make, you’ll need flour, sugar, salt, eggs, milk, and butter. Begin by sifting the dry ingredients together in a bowl and beating the eggs and milk together in another bowl.

Once both mixtures are combined, add the wet ingredients to the dry mixture, beating them together. Slowly begin stirring in the melted butter.

When all ingredients are combined, heat a frying pan and pour the mixture in, rotating the pan so the mixture spreads thin and evenly across it. Cook until the top of the crepe is dry and the underside is brown, then flip!

To make some tasty vegan pancakes for Pancake Tuesday 2024, you’ll need some all-purpose flour, white sugar, baking powder, salt, water, and some oil. Begin by mixing all the dry ingredients together in a bowl.

Whisk together the water and oil in a separate bowl. Once all the dry ingredients are combined, make a well in the centre and pour in the oil and water. Stir until the mixture is combined, then begin to scoop the mixture into a heated pan to cook.

Top as you like, maybe with some peanut butter and banana or berries, maple syrup, and vegan cream. Delicious!
